Good things take time. How often have we said or heard that?
That’s why, as the idea for our new product began to take shape at our mill, we chose to take our time, carefully crafting its design and development. And for the past six years, we have worked hard to create a truly unique breakfast snack, the culmination of an extensive research and development process.
Today, we are ecstatic and proud to share the story of Fisarmoniche: the new breakfast snack from Mulino Bianco, made to a recipe that combines a deep respect for tradition with the spirit of innovation that has always set us apart.
AN INTRIGUING SHAPE
The fragrant twist of Nastrine, the indulgent softness of Pan Goccioli, the unmistakable tenderness of Flauti: all Mulino Bianco snacks are crafted to make a mark and become icons that resonate with our consumers, both in their hearts and their imaginary.
So, this year, Fisarmoniche has joined their ranks, ready to captivate all with its cutting-edge design. The meticulous craftsmanship of our team and the advanced technology of our production methods have bestowed Fisarmoniche with a unique shape, characterised by distinctive, identity-enhancing waves.
And the structural features of Fisarmoniche make it ideal to savour bite by bite but also to dunk. Because dunking isn’t just a simple gesture, it’s an Italian breakfast tradition, and with Mulino Bianco’s Fisarmoniche it takes on a new, delectable dimension.
A BALANCED RECIPE WITH A DISTINCTIVE FLAVOUR
Fisarmoniche is a naturally leavened snack made with a sourdough starter, crafted from a blend of cocoa and an 8-grain dough, enriched with a delicious barley malt and cocoa filling, topped with a hazelnut glaze.
In Fisarmoniche, the rich flavour of cocoa is combined with the energising power of cereals, creating a nutritionally balanced snack that caters to a variety of consumers’ needs. Made without colourings, preservatives or palm oil, Fisarmoniche contains 35% less sugar than the average top-selling snack and has a 4% fibre content. The cream filling, made from fresh milk, further ensures its high quality.
From dough preparation to packaging, including the icing and filling, our production process is 400 metres long and takes six hours to complete, because we believe that good things take time, and Fisarmoniche is a testament to that.
THE MELFI PLANT
Our connection to San Nicola di Melfi, a suburb of Melfi in Basilicata, is both long and compelling. This town is home to one of our most significant bakery plant, renowned for its excellence and quality. Our first facilities were set up here in 1986 to begin producing two iconic Mulino snacks: the delicious Tegolini that continue to bring joy and delight to our homes, and the Soldini, cherished for the sweet nostalgia they evoke.
Over the years, Melfi's production has expanded its repertoire to include other iconic recipes - Fette Biscottate, Flauti, Biscotti, Pan Bauletto and Pancakes, to name a few - allowing our factory to establish itself as one of the most dynamic and innovative in Italy.
It is only fitting, therefore, that Fisarmoniche was born in Melfi, where one of the most significant chapters of our story began and continues to unfold every day. Here, we honour our love for great food, respect for tradition and passion for innovation.
FROM THE SPIRIT OF MELFI, OUR FISARMONICHE
Today, in Melfi, we conduct over 5,000 quality checks on finished products and 200 on raw materials. Our dedication extends beyond excellence and quality; it encompasses technological and regional advancement as well. In the past three years, we have invested over €30 million to make our plant even more efficient and cutting-edge, focusing in particular on improving worker safety and gradually reducing our environmental impact.
Over the past 10 years, we have reduced our use of water by 40% and cut CO2eq emissions by 27%. We have also empowered our employees to form a multidisciplinary team, fostering that virtuous exchange of skills and professionalism that generates innovation. That same innovation that ultimately led to the creation of Fisarmoniche.
“Fisarmoniche is the most ambitious and intricate research and development project Mulino Bianco has undertaken in recent years”, says Corrado Ferrari, Product Development Director Mulino Bianco. “The process of bringing it to life involved many stages, from panel tests and concept development to prototype studies and updating our production plant. This snack is unique in the cream-filled product landscape in terms of both shape and production method. We prepare the filling at the same time as the product is baked, and a specialized pasteurisation process ensures both organoleptic excellence and food safety. Mulino Bianco thus continues to lead the sector on the intellectual, industrial and cultural fronts."
