Innovating goodness: stories of our evolving products

In the early 1950s, in the United States, Pietro Barilla set out on a journey that would forever transform the way we package our pasta. When he returned to Italy, he chose to move beyond the tradition of selling pasta loose, introducing a revolutionary cardboard box instead, thus creating our Blue Box. A treasure chest destined to become an icon in pantries around the world.
Since then, we have never stopped observing, redesigning and refining it, an ongoing process that has led to cardboard packaging sourced from responsibly managed forests and the removal of the transparent window, a choice that allows us to save 126,000 kg of plastic every year. This is a story of vision, care and responsibility. For us, it is a tangible example of how innovation has always been a guiding principle, one that supports us in the present as we move toward the future with confidence and enthusiasm.
INSIDE THE PACKAGING: WHEN INNOVATION BECOMES A PRODUCT
Thanks to precision milling technologies, we can now “peel” the wheat grains we use, removing only the outer layers while preserving their proteins and minerals, an approach that brings together nutrition and great taste. These qualities shape the recipe for our Mulino Bianco Pan Bauletto Integrale, where the specially processed, broad-leaf bran releases the full flavour of the wheat, remains visible in the dough, and creates a surprising balance between softness and crunch.
At the same time, we have reimagined one of the world’s most beloved comfort foods. Our Lasagne Emiliane, thanks to pasteurisation processes and carefully controlled pasta porosity and thickness, can be used directly in the baking pan, just like fresh pasta. We have therefore simplified their preparation while enhancing their distinctive flavour and natural sweetness.

Furthermore, in response to the needs of today, for more than twenty years we have been exploring the world of plant-based proteins to offer our customers tasty, balanced recipes. This is how Barilla Protein+ was born: a product that delivers a higher protein intake without compromising the texture and authentic experience people expect from a good plate of pasta. Three different examples, all moving in the same direction and continuing to innovate, starting with the raw materials, thus responding to change and helping to guide people towards new ways of nourishing themselves while sharing the pleasure of food.
GREEN THAT REWRITES TRADITION
Deeply connected to the land where it originated, yet created to reach tables around the world, our Pesto alla Genovese is the result of a delicate balance between tradition and technology. Over the years, we have perfected a method built on three pillars: gentle preparation, with cold blending to preserve the integrity of the ingredients; rapid, non-invasive heat treatment, which ensures safety and quality throughout its shelf life; and short processing times, designed to maintain the basil’s natural aroma and vibrant colour.
It all begins with the selection of specific basil varieties, distinguished by their pale green colour and intense aroma, and chosen for their natural resilience. Their aromatic profile is evaluated by our Sensory Team and analysed in the laboratory using advanced tools, including artificial intelligence, allowing us to map and recognise every nuance of their bouquet.
But the care we devote to producing our basil begins even earlier. Working with thousands of farmers, we promote responsible practices across the entire supply chain, as set out in our Basil Charter. Among these is a sustainable agriculture model that combines crop rotation, biodiversity protection and digital tools capable of monitoring soil conditions, climate and crop health.
BREAKFASTS THAT EVOLVE WITH PEOPLE
In the 1970s, we helped transform sweet breakfast from a moment mainly dedicated to children into a daily ritual for the whole family. In 1975, with the birth of Mulino Bianco our products began to shape what we now call the “Italian breakfast”. Since then, we have continued to renew and innovate, listening to people and adapting to changing tastes and lifestyles.
From this ongoing commitment and continuous research, Mulino Bianco Alveari, were born last year, designed for an increasingly customisable breakfast. Their honeycomb shape, also developed with the help of 3D printing, can be enjoyed in many different ways, from dunking to spreading them with jam, showing how even the products we have always loved can evolve while preserving their essence, when technology meets care for people. The same approach also guides the creation of our snacks. With Pan di Stelle Mooncake, for example, we have reinterpreted a traditional Japanese dessert and developed an innovative double steam-cooking process that extends its shelf life without compromising its distinctive softness.

At the same time, we continue to improve the nutritional profile of our products by reducing sugars and fats and by enhancing ingredients such as whole grain flours, seeds and nuts. This evolution also extends to our supply chain: from the development of our Carta del Mulino (“Mill Charter”) to the use of renewable energy in our factories, we are working to make the promise of a better world ever more tangible. Because for us, innovation means accompanying people on the journey toward a more informed future, without losing the taste and simplicity we all love.
NEW RECIPES TO OPEN UP TO THE FUTURE
As time passes and the future becomes the present, we never tire of evolving the Italian breakfast ritual. With our Mulino Bianco Fisarmoniche, for example, in 2024 we launched one of our most ambitious research and development projects. Six years of work, a major dedicated investment, and a new production line at the Melfi plant have allowed us to create a snack that embodies our passion for design, technology and flavour.

The iconic wavy shape of Fisarmoniche is created by combining cocoa and cereal dough, which encases a delicious barley malt and cocoa filling that develops during baking. Designed to suit every morning routine, Fisarmoniche is perfect for dunking in any cup and can even be enjoyed in small pieces. At the same time, its recipe balances goodness and nutritional value, thanks to carefully selected ingredients, natural leavening and a lower sugar content than the average best-selling snack.
This is how we interpret innovation today: transforming skills and creativity into new experiences and continuing to devise products that support people in their everyday lives.
