At the apex of the Group, the President and Vice-Presidents ensure that the Group's sustainability mission is understood, developed and is consistent with the values that guide the company’s business.
The Board of Directors – consisting of the Chief Executive Officer and the Directors who report to him – sets out its development strategies and evaluates its fulfillment of the objectives set, by checking the progress made. The identification of strategies, guidelines and the identification of projects for sustainable development, but also the monitoring of specific sustainability risks, is managed at Group level by a specific Board consisting of the C-Executives within their remits (Sustainability Board), led by the Chief Communications and External Relations Officer. In addition, a team of cross-function experts ensures that the strategies are put into practice in the work of the functions themselves. To ensure the process is effectively managed, a specific figure has been appointed: the Vice-President of Public & Scientific Affairs and Sustainability, reporting to the Chief Communications and External Relations Officer.

Over the years, Barilla has continued to strengthen the bond with the regions where it maintains a presence, actively supporting communities in difficult situations and carrying out projects to foster social inclusion and access to food. To guarantee and improve the health, safety and wellbeing of its people, the Group has a specific policy for the management and protection of health and safety in the workplace (HSE Corporate Policy).
Our manufacturing sites have also implemented systems to manage health and safety in the workplace. In 2020, 84 audit activities were conducted at various sites to verify compliance with local occupational health and safety regulations, as well as alignment with the OHSAS:18001 or ISO 45001 standards. In 2020, about 52,000 hours of workplace safety training were delivered to Barilla employees.
Our risk management system, prevention work, checks and training program have enabled us to reduce total accidents by 56% compared to 2010.

Barilla periodically invests in the modernization of its production facilities and in the implementation of new technologies capable of improving energy performance. Since 2010, we have also reduced greenhouse gas emissions per ton of finished product by 31%. The critical factors or areas define a company’s priorities when it comes to drawing up strategies and setting objectives. They are those which a company decides to measure and report on publicly to point out the way ahead and gauge progress in the various areas, and also to encourage reflection on internal and external processes and how best to bring about improvements. At Barilla, we have identified seven critical factors selected based on our history, culture, values and the vision and mission that make us distinctive. An initial selection was based on assessment, comparisons and dialogue with in-company specialists and authoritative groups of stakeholders, then there was a final selection involving senior management.

The seven critical sustainability factors are the most significant and relevant to Barilla and are also important for the growth of our company’s business. Involving stakeholders is important because it makes the process truly objective. It prevents us from just rubber-stamping our own activities. But civil society is asking us not only “what” we are doing, but “how” we are doing it. Increasingly, society is asking questions about how companies behave, independently of the financial results they report. The issue is no longer how much turnover and profits were generated, but whether they were generated in compliance with ethical principles.

The food pyramid is a graphical convention widely used to represent what should be a balanced diet. It indicates different levels for the food groups, according to the quantities that should be consumed in an everyday diet. Starting from the bottom, you can find the foods that must constitute the major element of the diet, with those to be consumed in moderation at the top.

For many years, there has also been another model: the Double Health and Climate Pyramid. Developed by the Barilla Center for Food and Nutrition Foundation, it combines the nutritional model of the Mediterranean Diet with a classification of foods according to their environmental impact. The Double Pyramid highlights how much less impact foods at the base of the Mediterranean Diet pyramid – such as fruit, vegetables, pulses and cereals like pasta – have on the environment compared to the foods at the top.

Can pasta be frozen?

Accepted Answer

There is no point in freezing raw pasta. Dry pasta has a variable shelf life (24-30 months), but it will be fine if you cook it a few months later. Freezing a cooked dish (a semi-finished product) is possible, although good practice must be followed in both freezing and thawing. Poor freezing or defrosting of a pasta dish that includes dairy produce, for example, is not recommended. Besides, a frozen then thawed pasta dish will definitely lose its organoleptic properties and structure, becoming more fragile.

We have always only used the highest quality raw materials, proven by tradition and science to ensure safety for people and for the environment. Where possible, we store them close to the manufacturing or processing site. We have also drawn up guidelines for the selection of ingredients and to establish the nutritional profile of our products:
- selecting and using only safe and wholesome ingredients of excellent quality
- favoring the use of natural extracts and ingredients rich in nutritional value, to improve the dietary characteristics of our products
- adopting manufacturing processes that maintain the quality of the products in the best possible way
- not using hydrogenated fats

Barilla was already compliant with the European Directive on food safety before it was implemented in Italy (L.D. no. 155 of 1997). In order to guarantee the safety of the various different products, every manufacturing and distribution unit applies a prevention system against all possible food contaminants known as HACCP: Hazard Analysis Critical Control Point. Barilla also possesses G.M.P. (Good Manufacturing Practice) company manuals, which provide standards for good hygiene practice. Together with the HACCP system, these protect against the risk of contamination by using global preventative measures to constantly guarantee product hygiene and safety.

What is the difference between durum wheat and bread wheat?

Bread wheat and durum wheat belong to two different species: "Triticum aestivum" and "Triticum turgidum durum” respectively. Despite being similar in appearance, the two species have notable differences, such as different adaptive properties: whilst bread wheat suffers in hot arid climates and is cultivated in cold rainy climates such as North Italy and North Europe in general, durum wheat adapts well to the climates of the Mediterranean basin (South Italy, Spain, Greece, North Africa, etc.). A fundamental difference between the two species lies in the protein composition of the caryopsis: in the case of durum wheat, it is composed of a tough gluten well-suited to the production of pasta, while in the case of bread wheat it is composed of a more extensible gluten better suited to the rising phenomenon typical of bread and bakery products.

Barilla’s way of doing business focuses on attentiveness to the environment. Wasa, Gran Cereale, Harrys and Mulino Bianco brands have already reached their carbon neutrality goal, by reducing and offsetting their emissions of CO_2eq. In 11 years (from 2010 to 2021), the Group has also reduced CO_2eq emissions per tonne of finished product by 31%. In addition, Barilla has reduced the environmental impact of its supply chain. For example, in Italy, 30 trains connect the Foggia plant with the one in Parma, while 70% of Barilla products destined for Germany no longer travel by road, rather on 3 dedicated trains that run from the Parma logistics hub to Ulm, taking about 5,000 trucks off the roads and reducing CO₂ emissions by about 6,000 tons per year.

Is pasta a light meal or a full one?

A pasta dish can be considered a ‘full meal’ if, as is often the case, it is combined with a sauce consisting of vegetables, meat, fish or cheese. In this case, the nutritional intake is balanced, especially in terms of carbohydrates from the pasta and proteins, fats, fiber or mineral salts from the other elements. However, simply seasoned pasta, for example with a little tomato sauce, is definitely a very light meal.

What does pasta owe its color to?

To the natural pigments in the grain and thereby in the semolina: these pigments range in colour from yellow to red and are also found in other ingredients such as eggs.

According with Italian law dried pasta (pasta secca) is a product whose moisture content of less than 12.5%. Fresh pasta (pasta fresca) has a humidity below 30%.

The quality of the products and the safety of the people who consume them are indispensable requirements for Barilla, and are ensured by carefully overseeing all the phases of the production chain:
from raw materials to retail distribution at the point of sale.
We carry out over 4 million tests per year to monitor the quality and food safety of our products, over 650,000 tests to monitor the quality and safety of raw materials and packaging and about 2,500 instances of monitoring of the main emerging risks in the food sector.

Every product bears a nutritional table with values expressed both per 100 grams and per serving portion, where the serving portion is defined. The values given are the result of analyses made by Barilla in accordance with directive 90/496/EEC and LD 70/93.

Is pasta fattening?

Accepted Answer

Pasta should not be viewed as a dish in itself but rather as part of a balanced and healthy diet. There is nothing that in itself is either fattening or not fattening, and the same goes for pasta. Of course it is very rich in carbohydrates and this makes it particularly well suited to the diets of people who practice sport. Because it belongs to the family of cereal-based dishes it is important that it is consumed in the correct quantities, according to the "food guide pyramid" (see the Mediterranean diet). Pasta, together with other cereal-based products, forms part of the base of this pyramid and is therefore one of the products that should be consumed in larger quantities during a typical day.

Can pasta sauces be frozen once opened?

Accepted Answer

Once opened the sauce and used only partially, the jar must be carefully reclosed and placed in a refrigerator and used within 5 days. If it is expected to exceed this deadline, you can freeze the sauce: you can put it into a plastic container (or in a plastic bag for freezing) and then store it in the freezer department with four stars. Upon reuse, simply thaw heating it in a small pot or for a few minutes in a microwave (the product once thawed should not be refrozen and used). As for white sauces we do not recommend freezing them.

Regarding Barilla packaging, in particular in some pasta packs, is it necessary to separate the paper from the plastic?

Accepted Answer

All tests carried out according to the reference standards show that the percentage of material that cannot be recycled with paper is below 2% by weight. In the recycling process of paper and cardboard such a percentage is allowed (even in the countries with the most severe restrictions).
We can therefore confirm that it is NOT necessary to separate the plastic window from the cases before placing them in the circuit for the separate collection of paper.

What do you mean by ‘vegetable fat’? Which vegetable does it come from?

The term ‘vegetable fats/oils’ refers to a mixture of different fats or oils of vegetable origin. The mixture clearly varies from product to product depending on the organoleptic result aimed at. Since 2016, we no longer use palm oil in any of our bakery products, replacing it with other oils such as sunflower and rapeseed instead. This is the upshot of a journey embarked on in 2010, aiming at an improved balance of saturated fats. It has led us to work on both the reformulation of existing bakery products and on the design of the new products to be launched. We have also decided not to use coconut oil, hydrogenated fats or artificial colorings.

The product distribution stage is a complex operation involving transportation and interim storage, managed by more than one operator, in which accidental events (e.g. contact with other food products infested by insects or unsuitable premises) cannot be excluded.
